I've been using 10 amp Minn Kota's for close to 30 years. Never a single issue. Either Amperage should be fine unless you're going to fish all day for several days in a row. The 5 may not get you fully charged in a short summer's night.
I like my NOCO genius and a few of my friends have them also.

I use an older model Minn-Kota 2bank 10a/bank (that came with the boat when I purchased it from my friend). My buddy uses NOCO's he purchased a few years ago. Both seem to be doing the job. Were I to have to purchase a new one, either of these brands would be fine, but they'd have to be digital. And yes ... each bank would be 10amps. :twocents
Noco Genius and I would go with a 10amp. I still have a Minn Kota precision as well.

Definitely agree with the 10 amp NOCO charger. One thing to consider is if you will ever add a lithium battery as they require a higher output charger. The NOCO has a selector switch for each bank for the different batteries including lithium. Just something to keep in mind.
I have a older model Minn Kota and it works great. I have had it for about 10 years.
10 amp Dual Pro
3 bank Minn for me... Next week you will be glad you went with the 10 amp... Being able to charge acid or gel is a plus as well...
For the bass boat and it’s three batteries it had I bought a BPS store brand, I think it was a pro mite. Owned it until it stayed with the Carolina skiff that I sold a couple of years ago. No issues to speak about. And got super life from the batteries that were connected to it. Shortest life for batteries was interstate at a touch over three years. Love my onboard chargers. Using a noco single bank now that is as new as the battery it’s i. Charge of so no long term report yet. The noco is smaller than others I’ve seen and they have a good line up.
I have a no o charger on my brand new boat in 5 amp, I used it once now not charging, it’s under warranty but not sure if the battery is going to be. Used the boat maybe 4 times now and the battery went dead, by me not knowing the charger was not working. Now the battery will not fully charge till the green light comes on.
I have one of the Basspro XPS 3 bank 15 amp chargers. Cycled everything over 2 winters and kept things up for me really well.
I use Nokos on lithium and Minnesota Kota on sla.
5 amps . I need my sleep time.

The US made Dual Pros are repairable, also can be changed to lithium profile for a little $.
