Just ate a bag I put in 03/2021. I couldn't tell a difference. Scott

Good until they get frostbite.
I use the same thing and covered in water making sure all the air is out.
After soaking overnight in the fridge I fill bags with desired amount of filets and used bottled water to put in the bags.
Also date and write number of filets in each bag. Rotate eating using date.
Down to 8 bags now.

Dunno because I vacuum seal all mine. Many years ago I used to use milk jugs and fill those with water. After about 7-8 months I could taste the plastic and the fish didn't taste fresh anymore. That's why I went to vacuum sealing and have never looked back.
I freeze mines in zip lock bags filled with water. I never have to worry about freezer burn. The only thing is it takes forever for them to dethaw before you can cook them. I took out a bag at 9am and they were not fully unthawed until 8pm.
The old timers always froze in water. They last a long time that way
I try not to go longer than a year in the freezer, and no longer than a few days in the fridge.
FoodSaver no water, even dry them as much as possible and have eaten several bags over 2 years old and could tell no difference.
They don't normally stay in the freezer for 2 years but sometimes get buried and found while digging.

I keep them about 2 yrs in a water filled zip loc. I defrost them with cool running water if needed that day or if I know the day I will fry, I take out a bag from the freezer and put in a bowl in the refrigerator a couple days before. They will defreeze in 2 or 3 days, like a turkey for thanksgiving.
I recently "found" a bag of crappie in the freezer at the lake house that was from March 2017. It was frozen as the OP described. Thawed it and cooked it and it was fantastic!
:scratchhead if that's for waxed milk carton, Back in the OLDEN DAYS milk came in quarts and half gallon sizes that were made of cardboard that was heavily wax coated. AND you can tell the Greenies that they were a lot more environmentally friendly than plastic
Froze in water , a VERY long time , we do venison that way occasionally too ...

I vacuum pack them. Wash them and dry off then vacuum pack them they will last for over 2 years.

I dry mine on a paper towel then vacuum sealed. I’ve read they will last three years but mine never make it that long. I make sure I empty my freezer of fish every January.
If they are fully frozen in water, basically forever. Air is what ruins fish.
I vacuum seal mine now to save freezer space, and they are typically good for 2 years if they get lost in the freezer somewhere. Pat dry, seal, and then double heat sealing each end is usually smart. If i dont eat them in 6-8 months i usually give them away anyways.

I freeze in a ziploc bag with water but I roll the bag up forcing all the air out and some of the water. I don't want an excessive amount of water as I feel this crushes the fillets when freezing and makes them soggy. I've been playing around with flash freezing them for several hours on a cookie sheet them vacuum packing. I think they are more firm when cooked like fresh caught are.
I remember an aunt and uncle that did a lot of fishing, both fresh and salt water. They always froze in water in waxed milk cartons. Dont remember the tops being sealed either. Just the fish flesh covered by the water when frozen.
The fish in water thing I'm sure works but I don't know 8 days before I want to eat fish so I have time to thaw them out. :biggrin

we freeze em in water in bags and drop em in the sink in a bowl in the am and they are in ice water when its dinner time ...:dono
Frozen in water . We also used waxed cardboard milk cartons (ones with fugitives on them ) . I do a lot better now retired of predicting usage . Ten bags with 10 fillets for the winter months and eat fresh the rest of the year . Let them spawn instead of staying in the freezer for three seasons .
