I almost use a wash that is 50/50 yellow mustard/beaten egg. Then roll in cornmeal.
I’m sure it would be great if using flour as well

Pretty tasty from what I remember
Call me, when it's done,
Haven't tried on fish. A few weeks ago did a slab of ribs out of 4 slabs as a test (yellow mustard then dry rub). It was obvious which one we washed with mustard, it was great and will do again. Kept it juicier and did not taste like mustard.
I always rub ribs and pork shoulder with mustard before applying dry rub as well!

Love the mustard dip then breading. Another way I do is dip in hot sauce then breading both are tasty
do this as you don't taste mustard but a hint of spices. do it with mayo as well. what ever keeps the breading/flour on works. did beer with flour batter last week but you just can't thin the batter enough to not have half inch of it on filets which over powers.
Mustard and beer season with Seasonall salt and lots of garlic. Let sit over night or at least 8 hours. You will have a great fish fry
One of my favorite ways to fix them.
Mustard is pretty good on those fillets
Salt, pepper, and then mustard. Have the grease ready, dip in the flour, then straight to the grease. Don’t let them sit out with the flour on them.
I seen everyone talking about the mustard. Well went and try it tonight just the mustard and yellow corn meal. I usually just use the yellow corn meal. I was amazed how good it tasted gave the fillets a more crisp taste and more crust.

My bath is 2/3 brown spicy mustard and 1/3 Frank's hot sauce. Add a little water to thin.
Then enjoy with cornmeal seasoned however you like.
Not spicy once fried so the kids eat it up. Attachment 375630
What's not to love about it? Sounds great!
