Without a build up, heat will remain the same . Cook on . jmo.
Looks like it's just getting broke in good.

Purple Power will take all that old grease off. I found that out while cleaning a commercial type popcorn popper.
My favorite fish skillet now is a cast iron one made by lodge with the grill ridges in the bottom.
But yours looks fine to me. Cooking gear is like fishing gear, the tried and true and trusted
Another 100 fish frys and it will look like mine.

Heck no don't clean, that's helps in heat retention.
As long as there are no food particles clinging on the sides from the last fish fry to the next I'm okay with it. No different than what's in most kitchens in food establishments. Seasoned just right! :cheers2
