Looks like a Louisiana mess. I was taught to filet the sheepshead from the tail up and cut around, not through the rib bones. Works good on the bigger reds also. That is with a stiff hand knife, like a bubba blade. That's some nice trout. Great going and fun to get beat by the wife on a day like that.
D is right on about the sheephead. They have a slit on their backs an that's where I start cutting

Cleaning a Sheephead A.K.A. Jimmy Carter is a whole lot of work for not much meat. I usually throw them back unless someone with me wants them. You must use a stiff bladed filet knife as they will ruin your electric

Grilled sheepshead on the half shell is amazing. Great flavor. And grilled red fish on the half shell. I think I prefer the sheepshead. And yes a day on the water with my wife is the best. I enjoy that she enjoys it. She don’t have a lot of luck freshwater fishing but she loves saltwater fishing.

Sheep head are the poor man’s snapper and are as good as snapper. They are regularly substituted for snapper in restaurants, or used to be when I were selling them years ago [emoji123]. That’s a fine mess of specks
