I can't say I have compared the two or noticed a big difference, but I know for sure they both taste better than "no crappie". lol
They both taste good
Leave the warm water ones on ice overnight before filleting . I taste no difference . jmo:twocents
Not sure on your original question. But, we have noticed a taste difference in fish that we kept in the livewell vs fish put on ice.

There is not a lot of difference in the taste but there is some. You won't go to someone else's house to eat and say these
are cold water crappie. You can tell the difference when you are cleaning fish in the summer. They have a different smell.
I don't know if it has to do with diet, warm water, or hydrogen sulfide buildup in the deeper water. I'll take either one if
someone is cooking. There is a big buildup of yellow fat on the backs of channel cat in the summer. Don't know if it is related.
Cold water crappie used to mean it was the first of the season and man they sho was good. Fish 12 months a year now and don't notice it near as much. I put up about 90% of my crappie in the summer time so we eat warm water crappie most of the time.
I've never had crappie form up north where it snows and ice is a lot, but these down south are real good
I use to just stock the freezer in the summer pulling cranks,2010-2014.I never fished in the winter until 2014 and it took me a couple years figure winter fishing out.When i learned to catch them in the winter and they seem to taste alitte better i hardly ever keep a fish during the summer.Im like you fish 12 months a year and in some rough conditionsAttachment 309402

Can you tell the difference between a fish caught in hot water eaten in a cool place vs a fish caught in the cold water eaten in a warm place ? Say that three times in 20 sec . lol My brother says he can tell the difference between "Hunts" and Heinz cat-sup . Told him to get another beer .

Cold water tastes better
I prefer to catch’em, clean’em and cook’em. They taste better to me before they’re froze. They’re still good.. but a noticeable difference to me. I had a coonass Friend tell me to freeze them whole and set them out to thaw and clean them as I wanted a meal and they would taste just like they were caught that day, but I’ve never tried it. I stock my freezer in Jan.&Feb just because i like when the water is cold and I dont have to ice. I can just keep them in the live well and dump the ice at home from the fridge on them for a couple hours then clean them.
Most of the fish I catch in the summer I give away and if I don’t have anyone wanting them we throw them back.
My goal is to put enough in my freezer to run out in December each year. I don’t like nothing in the freezer over a year

I clean out every year also. I've never had a problem finding folks to take cleaned fish. Usually have people reminding me
to remember them if I come up long.
I prefer cold water fish, regardless of species.
I THINK BIGFOOT TASTE BETTER , OH WRONG THREAD . I VACUUM PACK MINE AND IT IS HARD TO TELL THE DIFFERENCE . MOST OF THE FISH I EAT IS AS I CATCH IT . VERY SELDOM DO I TAKE ANY OUT OF THE FREEZER . AND LIKE DEE I GIVE A LOT AWAY . THE DIFFERENCE IS HOW HUNGRY YOU ARE . THEY ALL TASTE REALLY GOOD .
To me it don't matter what time of year I catch them. It's the time of year when you eat them. A fish fry always seems to taste better in the winter time.
You wouldn't leave a dead fish out in 80 degree weather and a dead fish in an 80 degree livewell is the same thing. Catch them, put them on ice, and I'll bet they taste the same. Leave the livewell for bait.
After cooking em at 350 degrees, I bet not one person out there could tell the difference in a side by side comparison of cold water caught or warm water caught!!!
