I scale them, then use my electric knife. Stand the bream on its back, place the knife at the anal vent and cut downward to the backbone. Turn knife and cut toward the head following the rib cage joins the backbone. When you hit the gill plate angle the knife downward and cut the head off. After you do a couple everything is done in one smooth motion. Head, guts and rib cage are all removed together.
