Usually gigged. We catch them on crawlers. Like the small ones the best. We skin them and then score them down to the backbone. Fry until crispy. A lot of people scale them and leave skin on. I do not like the skin on any fish. Want mine naked. The skin can give fish a strong off flavor.
There ant much better than some fried sucker and taters around the end of December just before the water turns hard.thanks for the post

some great eatin rat there fo sure. love fresh suckers, we scale,filet,fry,enjoy.

My grandpaw had a saying about chitterlings. He said when you got down to eating the guts, it was time to kill another
