Loading or unloading, mine does the same if I have the trailer too deep.
Mine does it every time except on a non steep ramp.

Buy a MKA-47 slide base for it. I can slide my RipTide back a good 6 inches when stowing it. Only thing mine hits is an occasional brush with a dock.
Unloading I can't help you other than moving it, loading you can not put the trailer in as deep and use the motor to push it up, you will have to trim up on the motor before giving it a good shuv pushing the back of the boat down and raising the nose, takes a little practice but it is how I have to load 90% of the time.

What MrDux said. Got one and it works good, no problem. Barnett landings were the main issue.

I've been thinking of ordering one of these myself. How important do you all think it is that the trolling motor is mounted dead center of the boat. I could adjust the mounting position off about 6" of center and wouldn't have to buy the mount. This may be an option for the OP as well. However I can't get it out of my thick skull that it could cause a boat control issue of some degree. I'm a tad bit OCD when it comes to some things. LOL
I mounted mine center only because it does not interfere with my spider rigs at all right there. I had one mounted off center and never noticed control problems.
I mounted mine a good bit off center and ran it straight with the boat....no problems at all. Attachment 238251

Yep....mine had a mounting plce on the side too.....but I removed it. I did mine this way so I dont have to move rod holders to deploy or stow the TM. And it keeps my TM from hitting roller on trailer when loading. Oh yeh....I have since seen the light and replaced those rod holders with SpyderLoks
I have a skeeter and I have the same problem. The MK bracket will not work on the skeeter because of size. You have to back down just enough and use the outboard to back off....it's a little tricky. I read on a forum of a great idea, and it works if there are two people. Let the other guy back you in and put your outboard in forward, and accelerate just a tad to keep the bow on the roller while its backing down. Once it is deep enough, just put it in neutral and back off...by then, the roller will be well below the bow. I broke a piece on my MK hitting the roller last year. It is a very aggravating problem on a lot of boats for sure.
Mine is mounted like G's and a little further to the left. Never noticed any real control issues.
I just put a Drotto Latch on my trailer so I can pull a rope and trip my bow eye release when the boat is as deep as I want it to be. I haven't got it adjusted perfectly yet but it sure saves some sore backs.

Mine is off center so it clears everything behind it on the deck when stowed. Never had a problem with how it tracks.
I went to my local machine shop had them make me a 5 inch tall aluminum bracket for mine I also helped on un latching it to deploy .
Don't move it....Just quit backing the trailer down so far in the water when unloading the boat. U back it down too deep the back of the boats tried to float while the front doesnt yet. Therefore hitting the roller. It used to happen to me all the time, til I quit. Havent happened since I quit. I have ALOT of trailer out of the water both when I am unloading and loading. It may not cause an issue with the trolling motor off to the side like in the piks above, but it doesn't make sense to me why not? Boat is made to cut theru the water at the V. So to propel it from the side seems like it would contradict its forward motion. I never had to take Physics, so I'm most likely wrong, but Im just saying. I do know in a current setting if you dont anchor right in the center of the V you will sway back and forth constantly and that drives me crazy while catfishing. hahahaha
Might consult the factory and consider lowering the roller. Have same issue. Have the MK plate but only use it on steep ramps like Barnett and Washington. Generally, I'll just unload as slow as possible. To give time for front to float. I've busted one side cover so far.
Have gotten pretty good at the two man thing. Two problems
1. Flat bottom and doesn't slide very good. Stays in place on trailer well.
2. I fish along a lot and it's difficult to do on a steep ramp. I do back slowly and liked wannabe I have broken one side of the plastic cover. Will consult the mfr. also taking back to marina to see if my guy has any other suggestions. He has been very good to me

You might want to go another way here. Go to WalMart in the kitchen stuff and get you a couple of those $10 white plastic cutting boards. Cut them into strips the width of your trailer bunk boards and screw them into your boards. They will make the boat come off and go onto the trailer much easier.

Re-mounted mine off center when I noticed the same problem. Since then, no problem. I have been using it that way for three or four years, and I have never noticed any boat control problems.
