First thing to consider is whether or not the fish, or the lake the fish came from, has a consumption advisory. Most will specify NOT to eat the fat or eggs of different species, since that's where the PCB's & Mercury tend to collect.
If no advisory against eating them ... you have to remove the egg sac "whole", and keep it that way !! Busted egg sacs will allow individual eggs to drop out into the grease, and they'll "pop" just like popcorn ... splattering grease everywhere. You roll them in cornmeal, just like the fish, and fry them the same (just not as long). They really don't have much in the way of "taste" (to me) and can be a bit "gritty" as far as texture. Then again, some people eat the tail fins of fish  ... so, to each his own. I just don't bother with them, since they don't really taste "all that" to me ... and they're a bother to remove, if you're filleting the fish with an elec knife. :twocents
the fellow that taught me to white bass fish, only ate the eggs, he was a heckuva nice guy to me,i appreciate the heads up you give me but iv'e gotta try em.

I fry em up and think they are delicious. each to their own. I think they taste like cornbread. dip em in catsup and gobble em up.
i like cornbread, mine so good u can eat it for breakfast.... pass me that jelly!
crappie eggs are good I fry them when I catch them during the spawn, and yes the egg sac needs to be intact and not torn.
What about mixing them in hush puppies?

I'm sure there's a YouTube video out there, somewhere ... showing how it's done. :biggrin
But, how I would do it would be to make a cut (back to belly) as close to the gill plate as possible, with the knife angled towards the gill plate. Then carefully run the knife (sideways) into the bottom of the belly cavity ... turn the blade down and slice open the belly. Remove ALL the innards, together, then separate the egg sac from them ... being careful to not nick the sac with the knife, or tear it when separating it from the other organs. THEN proceed to finish cleaning the fish. (but that's from the viewpoint of someone that fillets with an elec knife !! )
It's probably easier to remove the egg sac during the pre-spawn period, when the egg sac is bright yellow and fairly firm. Once it gets time for them to drop, the egg mass is mushy/runny and the sac isn't as firm and more easily torn.
Never had a problem removing the eggs, My barn cats love them.
Stick them with a fork a couple of times before placing in deepfryer battered. And they won't pop and splatter you with hot grease. Me and wife fight over them. :Rofl
I aint never cooked them but my Dad did. Just from the fish I have cleaned the healthier the fish are when you clean them the better shape the eggs are in. So keep them cold and alive.
