I think the Panko 'crumbs' are already seasoned, and come in different 'flavors'. The cracker crumbs depend on style of 'cracker' used.
Personally, I don't "season" my fried Crappie with anything ... except salt/pepper, and that's only when it's on the plate :p
I use plain yellow cornmeal, more or less as a 'crust'. I want to taste the fish, not cover their taste with another. Not real hip on using 'batter' type coatings, either .... though I have eaten fish with Autrey's, and with Weisenberger (both are batter mixes). I've also used Southern Star Fish Fry Seasoning ... when I wanted a little different "flavor".

you cant beat just corn meal and salt and pepper.
i do like the quaker corn meal in the round box it is finer ground
and not so grainy as some of the bag stuff.
Try frying them naked with a bbq dry rub
go easy on the seasoning and use the least amt of butter or oil
Olive oil burns too easy. You cannot beat peanut oil for frying fish, but I use vegetable oil. If you are using olive oil for health reasons I a dietitian(sp) told me when you heat olive oil hot enough to fry you lose all the health benefits of the olive oil.

I dust the fillets in flour, then dip in beaten egg/milk wash, then cornflake crumbs seasoned with garlic salt and cayenne pepper. Drop in a skillet or deep fryer till they float and turn golden brown. The cornflake crumbs give an extra crunchy, kind of sweet crust to them. Recipe showed to me by a Canadian guide on a walleye shore lunch on Lake of the Woods, Ontario.
I use a bunch of different "breadings". I like Uncle Bucks (spicy) from BPS, panko, cornmeal, flower, italina bread crumbs, cornflakes, etc...... It kind of depends on the mood I am in.
i like to fish to have a little pop to them. the crackers sound good.
Amen.. House Autry The Hot and the Mild mixed together makes it perfect. Run through an egg/milk wash and dredge in the above mix. Wont get any better. I fry mine in Canola Oil..
It's Zatarain's seasoned fish fry for me, been using it for years and haven't found anything that I like better.
