I just put one thumb on the tail let my skinning knife go down the back bone then run it down the skin side. On cats this big I do a double filet and get the red meat out. HTH I usually don't keep em this big but....

JR, Real nice mess of fish in my territory. I see you are using black,green, and yellow. I been using red,black, and chartreuse. Tri-color jigs been good for years in the winter time in Lake des Allemands and Lake Boeuf area. I like the catfish also. Nice job on that catch.
Our chickens found that they really like those eggs. Hope to make them happy soon.

Nice catch JR. Have heard of frying the eggs paw paw, but I'm too skeerd to try em so I just feed them to my dog and he loves them raw.
One caution if you want to try the fried eggs. Slit the egg sac to prevent it from popping and sending hot grease all over the place. I like to fry my fish first, dip the eggs in fish fry after slitting the egg sac, then drop them in the hot grease and putting a cover on them or step away. I also turn off the fire and let them cook until golden brown, it doesn't take but a couple of minutes. They are better slightly crispy. Drain and eat.
