I cut my steaks thick and then beat them flat with a tenderizing hammer.
Pour 1/4 inch of oil in cast iron skillet. Turn on medium heat.
Season the actual meat. I use Lowery's season salt and black pepper.
To batter the meat I have found that the easiest and cleanest thing to do is put a pile of flour on a cookie sheet, then add 3 eggs in a bowl and a touch of milk and stir that up. Then I flour both sides of the meat, dip entire meat in the egg wash, then flour both sides again. Then drop it in the grease and leave them alone til they r good and brown on one side and then flip them. Leaves a beautiful crust on them!
This only dirties up 3 dishes. The cookie sheet (I beat my meat on the cookie sheet as well) the bowl, and the cast iron skillet.
