Congrats they look like great cookers.
Had mine a year and love it. The key to temp control are the vents. Use only lump charcoal.

I like it.........made some wings and burgers. Oh and some snake bites wrapped in Italian ham stuffed with salmon cream cheese.
10-4, how is the temp control, curious if it would be as good as the Weber Kettles for the extra money.
It holds temp like a champ. It will burn 4-5 hours on a hand full of lump charcoal, amazing. Small hand full of wood chips and it made the chicken taste like I had smoked it for hours............I like it.

I have had mine for a year and LOVE IT! Here's a pic of a Boston butt I smoked low and slow for ten hrs. It barely burns up the charcoal. Put in one layer about 5 inches high and smoked 2 butts, a chicken, 2 racks, and burgers with it. It's truly amazing how well it holds temp.http://i974.photobucket.com/albums/a...531_153102.jpg
What size grate do you have holding that pizza stone?
15". Think I got it from Home Depot or Walmart. Fit's nicely. If you look on line, you can buy a stone that fits in the 3 slots where I have the grate. Friend had one and it seems to produce more smoke. I have a Kamado Joe store not to far from me. Gonna pick one up!
My grate is a Weber grill grate. 22 inches I think, fits perfect. About 20 bucks at Lowes.

225 for ten hrs. Injected with apple CIDER, not juice. Breaks down fat and meat better. Homemade rub. Lump charcoal with apple and peach wood for smoke.
