Gumbo Verde(Green Gumbo)
This weeks gumbo is a almost forgotten old style made in the winter outa what ya had . If you have never ahd it ya really need to try it. Lots of cooking shows make this out to be some fancy involved recipe but it aint and the reason my recipe is a little vague is ya sposed to use what ya got. Oh and by the way this post has a picture of MY gumbo bowl.:biggrin

Looks good. Is that winter mix of lettuce meclun mix. If so I bet that is good with the arugula in it. I love that nutty and pepper flavor. Last night I raided my garden and made a grilled chicken salad with bib and mesclun mix lettuces. I am about to pull and can the turnips. I had a few the other day and they sure were sweet. I can't wait for spring to get here and the garden to dry out enough to turn it.

you are right its mesclun with parsley beets and carrot greens as well. If you get the chance fix a mess of beet greens they are amazin.

I don't plant beets. I never developed a taste for them. To me they taste like dirt. I didn't know you can eat carrots greens. I have a 24ft row of carrots. They are taking their time growing I planted late this year. I can't wait to pull and eat them covered in butter and honey.

Cappy, I think you could make grass look edible. I'm not much on greens but it does look good.
Saute I turned my garden for the first time since last early summer. I had 3.50 inches of rain on the 23rd and today the 27th it was good to till. I just did it to loosen up the crust and put under any weeds that were trying to come up. I was so nice out today I just had to do something.
I couldn't go fishing because I had a follow up appointment with the eye Dr. because I had a cataract removed yesterday. I usually plant snap beans in the middle of February for an early jump start. Most years I get away with it but not last year.
My garden halfway done, I did finish the rest.

Your making me jealous. Mine is mud between rows. I am planting a couple of rows in a few weeks. I will be rotating crops in as the winter crops are harvested. I have sugar snaps and snow peas already climbing the trellises. I will be planting pole beans in 2 weeks too.

Gene, that dirt looks excellent. Did you till it in with anything? Seeing that wants me to fire up the tiller. I'm afraid though it may be still early, been burnt before when I got excited about such things. Tease weather for sure right now.

Cappy, where I come from Verde means cut with heavy amounts of green chilies. Made my mouth water typing that, green chili stew will be on the agenda before long. You fellas aren't living right until you've had that. Thanks for posting.

Man that green chille stew sounds good! Verde pronounced in Cajun is said vad with the apple a sound. it means Green.

Verde in Spanish is behr-deh. The r rolls off the back of the front teeth with the tongue. Green as well.

Randy I didn't till anything in this year. I usually collect all the bags of leaves and grass clipping I can get but this past year I just had too much going on to do it. It won't be long before people start cleaning their yards with this nice weather. I will then spread the bags of clippings between the row to cover the dirt which makes for cleaner shoes if we have a wet Spring. It also holds the grass down and conserves ground water when we go into our Spring drought. Today since the garden looked so good I ran the tiller again through it and then put on the hiller attachment and made me 5 nice rows upon which to plant my tomatoes. Much too early now that's for sure.

With that excellent green house you have Gene, you'll have tomatoes long before me - I'm jealous. I have tilled up and planted in the past when I thought all is well, only to get a serious freeze shortly after. Remember last March when we had the ice storm? We'll see. Thanks for posting.
