That looks excellent, and very fine I'm sure. Yummy is right. Still curious how a brisket would work in one of those - got to have my brisket. If you keep teasing us, we're going to make you tote that thing to Toledo Bend :)
I have never cooked a brisket before even on my wood and charcoal smokers that I used to build and sell. But....I have it on my list....going to try one soon.
I have had my masterbuilt electric box for 3 years now. I bought the cold smoking add on, and use it all the time. I highly recommend it for long smokes.

I use it even when I'm not cold smoking. It produces a better, thin blue smoke than just using the chip loader.

Have you cold smoked any fish ?
Just Salmon. I modified a wire fish basket to make sure the fish didn't fall apart. I now know there was no need. I have also done cheddar cheese, and made hickory salt.
I do recommend using it when your not cold smoking. It burns the chips much better, and you don't drop temp if you need to add more.
