The wife and I had to settle for plain ol fresh crappie caught yesterday with fries and fresh fried squash straight from the garden.

How long did you have to smoke it and at what temp to get done?

Very fine indeed! I like to take the casing off of some smoked sausage. Cube it and mix it into my smoked Mac n cheese.

Ha Ha, railroad men are sorta like firemen. They cook for themselves in their out-of-town dorms or in the fire house. I always hated washing the dishes so I learned how to cook. Lol
