Hey Duck,got a question. How long you blanch those peas before bagging them?

I've finished with peas, beans, three kind of pickles, and corn. Still got to finish up okra, tomatoes, tomato juice, and muscadine jelly. The last freeze got my plums and I didn't get my hands on any blueberries this year. Will probably do one more batch of sauerkraut.

As soon as they come to a boil, turn them off and let them cool completely.

I don't raise my peas and beans fee lay, I buy them shelled in Jackson, MS. for 25.00 a bushel. Bring them home, blanch them, and put them up in 20 oz vacuum packs. I wish I had a couple of gallons of blueberries, they make some fine jelly. They won't grow in this gumbo over here. I could have gotten some, just didn't want to make the drive. I've got muscadines running out my ears. They'll come off in about 3 weeks.
