Thanks, I'm good. I think I'm going to love wading--especially after listening to you guys bitch about boat etiquette. Besides, all those folks who don't know how to behave on a boat ramp used to be my customers. I try to keep my distance. (BTW, they don't behave any better at restaurants.)

There are two kinds of crappie, well actually three. You have the white crappie and the black. A few years ago but developed a hybrid between the two called a magnolia crappie. Speck, is just another name for a black crappie

Is there a preference as far as eating them? I've read about the Magnolias. What do they look like?
Good for you Paige, now you are hooked but it can get HI$ so watch out. We need to keep a good cook happy! As far as eating I like the black (speck) a little better but haven't found either to be bad eating. I think the blacks meat is a little firmer, IMHO.

Just a guess from the pic but the top one and the 3rd one look like blacks to me and the other 2 whites.

For the record, it was 2lbs 3 oz, 14". What was all the yellow stuff inside of them?
That was the roe, or egg sacks. Some people like to season them with a lot of Tony's and meal and fry also. They are a little on the bland side, hence the reason for a lot of seasoning. They also pop a lot when added to hot oil because they hold a lot of water.

Congratulations on your catch!Nice meeting you at camp and those fish you and Red cooked were fine!Scale them, fillet them, pan sear them skin side down in a little olive oil,lightly turn for a few moments, and grate some Riggiano on them and they are superb!

Thanks SlabLapper, I will try that preparation. But I don't think I can pull off the pink camo thing. I cooked my inaugural crappie "en papillote" last night, and it was fabulous. Today I caught four more, this time bank fishing near Wallace Creek. Can't wait to see whether Enid or Sardis crappie taste better.
Uh....en papillote? Your gonna have to tell these gewbers you cooked it in parchment paper. Then they will know what ya talkin' about.
