How did you catch them?
Snagging. Its the only way to catch them, they are filter feeders and wont take a lure or bait. We were in Ky where it's legal.

I knew they wouldn't take a lure or bait didn't know if you netted them or snagged them. We used to catch em in nets in Missouri when I was a kid. I still remember cleaning them. There aren't any bones just like a cartilage type spine.

Similar to flat head. Not the same but that's the only way I know how to describe it. We got 4 gallon bags and 13 quart bags from them.
Yes they are spoonbill/paddlefish.
Probably tastes like sturgeon since they are related. Is it oily? Do you have to parboil it?

You should really give crank baits or bobber & skein a try. Lots more fun and effective if you haven't tried it. Fishing for salmon has come a long ways.

Limit in ky is 2 except where we were below the Ky lake dam in the Tennessee river the limit is 8 per person. Mean green and myself both had our 8.

I have caught some and fried them up. There are just ok tasting in my opinion.
Wow, Wow, and Good job! In Il. we are only allowed "2" I don't like to eat fish but if I did this would be my choice, no bones and after you get rid of the red meat, they're good! NICE CATCH!
