Decided to cook a small mess of Crappie. Ever scale them leaving on the skin , then filleting ? Makes them better to me . Too nasty to fish again so here is the next best thing.

Yes, the skin is what I like. Filleting with the skin on is great. If they are smaller crappie, it win just get his noggin cut off and fried whole!
Dog gone it Nimrod I just got though posting on jackie53 post about how cruel this is, you'al post these kind of pictures. I was kinda expecting a little better out of you, but I see you don't mind rubbing it in on a fellow that can't catch fish either. Man that sure looks good. Oh by the way I hope and PAY your wife is doing better. I pray peace and comfort on her in Jesus name.
Nimrod, those would be good with some fried taters! This is how we make ours. Nothing fancy. Just good
McCrappie Fried Potatoes recipe:
1. Cut red potatoes and add sliced onion
2. Heat a little bacon grease in a skillet till it's good and hot
3. Mix and Drop sliced potatoes and sliced onion in skillet. Cover and flip when seared to a golden brown.
4. Lower heat and Continue to cook covered until potatoes are cooked. Usually takes about 15 minutes / depends on how many you're cooking
A good friend of mine calls that cleaning them twice. Really good! Taste like whole fried. Making me hungry!
hmm I always filet skin off.. Sounds like I need to try skin on. I' ll have to give it a try.
Makes sense to me. Kind of like frying chicken with the skin on. The Colonel makes the best chicken skin.

Goose may have a different version . Dry the fillets on a paper towel. Wet fillets stick to hot cast iron. I heat cast iron skillet smoke'n hot . Just a small pat of butter toss on fillets and cook couple minutes each side. Best coated with blackening seasoning before cooking. They make great fish tacos! I use the soft flour tortias and everything you put on regular Taco .
Goose forgets mine too nimble till after hunting season lol but he has a good fish batter. Maybe he might post it back up here for ya
If I scale em, I'm cooking em whole. Love the flavor of them whole fishes. I guess the bone and skin give em that Real flavor!!!
Nothing like some golden brown crappie fillets!
