Blue gills got it. Fresh cut fries that you par cook at around 300 until their tender. Then pull them n let em sit. Just had to flash fry them at 375 until brown. That's how your supposed to do fries.
Stand needs to be sanded n stained but were waiting til after the first of the year to do anything else. Worked our butts off when we moved in so were taking a break from working on anything else til the first of the year

What they all said! You blanch your fries in oil the first time them fry them again. Makes for a crispy fry and soft in the middle.Those PO BOYS look awesome.
The store bough fries have already been blanched in oil. That's why the cook so fast. Just not as tasty as fresh.
Store bought can't touch fresh home made, that's for sure.
