Sausage Fest

Making deer summer sausage and breakfast sausage tonight.

Cool thing to do. Never tried summer sausage. Got a good recipe or way of making it

A friend of mine makes a kit and we use about 25 percent ground pork shoulder to 75 percent ground deer. Then mix with the seasoning and stuff the casing and let cure for two days in the fridge. I smoke it for three hours at 300 degrees and the get some good cheese, crackers and cold beer.

Let me know whin it's ready.

If I woulda known that people would make summer sausage for some pointers, I'da been pointing for the last couple months.

Great post, nothing like making good eats from your kills. I made Summer Sausage used High Country kit bought at Acdemy Sports using 8 lbs of Pork Butt to 22 lbs Deer. Ordered a High Mountain kit in German Sausage from Gander Mountain and will make it later. Everyone liked the Summer Sausage , I may need to order another kit and buy more pork butt.

she went to Tn for xmas with the kids,grandkids,and greatgrand kids. she doesn't have a password. she got her on p.c. all i did these week was plain ground and pork fat. we do about 80% deer for all our meat cooking. Moved here in 2003 and built our house and have not had to clean a gun since, live in hills and everybody hunts (cept me) I get about 3 big deer a year just sitting in front of my wood burner. have wanted to do more fishing and it seems that is getting ready happen!! took care of my mom Attachment 144738Attachment 144739till she passed in 07 in Mt Home then I had cancer and that is ok they cut it out then my wife had a few health deals, still do a garden
and friend got me to sign up with so I sold all my jeep stuff and pleasure boats and ready to get to fishing

one more thing then got to feed the dogs and stir the fire and turn on the idiot box tv. i grew up in tenn and fished the tenn river and usually i did good enough fishing, when i moved here i have not done to good on the big lakes so come april maybe if i can keep my mouth shut and bring my hearing aid i can learn something

The whites are in the red cooler and crappie in the boat cooler and yours truly in my antique boat. It has a dole manual hydraulic tilt, you get that light boat up on plane and the old 25 hp will push the heck out of it.

Attachment 144819Attachment 144820 They only made them for a yr or two in the 70's as you can see I can also run in the White River when the water is 1 or 1 1/2 ft deep or up in the creeks on the big creeks, it a fun old cheap boat

Thanks, those seat are anniversary from Forrest Woods Ranger boats I do not remember how many years but they are worth more the the boat and motor. They may be 35 yr seats. Forrest gave to a friend of mine that ain't with us anymore
