I planted a jalapeno plant this year and my wife brought home one of those jalapeno racks from BPS you can put on the grill and cook some stuffed jalapenos. Have any of you done this before? If you have, what is your recipe/recipes?

Cut the top out and stuff it with cheese cook til cheese melts
They are also good stuffed with creme cheese and wrapped with a little piece of bacon on the grill.
Mix in some green onions and some pulled pork with the cream cheese if ya got it, then wrap in bacon.
You are only limited by your imagination.
Be sure to get the seeds and membranes out of the pepper before you stuff it. That's where all the heat is.
We normally run a polish sausage through the food processor until it is the consistency of potted meat, then we mix that with cream cheese, and shredded mozzarella or cheddar, you can add chopped onion or green onion too. One tip to make things easy, if you have a jerky gun with the round tips, you can stuff em quick and easy. It's like using a caulking gun full of delicious goodness.
x2. I have the same rack. Cut the tops off, clean out the seeds and ribs while maintaining the whole pepper - do not slice. With the rack, you want the outside of the peppers to be exposed and smoked, do not grill. Then they become chipotle. Stuff with your hearts content.

Cookie sheet with aluminum foil on top does fine with my poppers.
I cut mine in half. cover them with whatever you wish. Bacon and cheese as the topper.

Ingredients:
1 lb ground sausage (HOT if ya like! )
22 jalapeņos
1- 8 oz block cream cheese, softened
1 cup grated Parmesan cheese
Directions:
Preheat over 425. Cook sausage until browned. Set aside. Mix cream cheese with Parmesan cheese. Add cooked sausage and mix well. Rinse jalapeņos. Cut each jalapeņo lengthwise and remove seeds. Stuff jalapeņos with sausage mixture. Cook for 20 minutes until tops are golden brown (cook on a large baking pan).
There you Tommy, I use bacon also. Fry it well done, crush it into the mix.
1 cup grated Parmesan cheese, don't use the can stuff, use fresh grate your own.
