Looks like ya might have cooked em a little too hot or too long Major. Should be about as soft as a biscuit with a little crunch on the bottom.

It looks like you didn't use enough Bisquik. I use 3 cups Bisquik, 1 lb sausage and 1 lb shredded cheese. It's pretty dry till you knead it together.
I had to add water when I made mine. Mine were good but a little too big.

Sausage Balls (Paula Deen's way)
1 pound RAW sausage
3 cups Bisquick
4 cups grated cheddar cheese
1/2 teaspoon black pepper
Bring sausage to room temperature. Mix all ingredients thoroughly by hand. Roll into 1" balls and bake on a sheet pan at 375 degrees for 17-20 minutes.
Coon Biscuits (Mama called them beer rolls)
1 pound COOKED sausage
3 cups Bisquick
1 cup shredded cheddar cheese
1/2 teaspoon pepper
12 oz. beer
Mix all ingredients. Spoon into muffin pan. Bake at 375 degrees 17-20 minutes. Makes 12 rolls.

Gonna try it again later today. Still have 90% of the mix, will add some flour and kneed by hand (just mixed it with spoons the first time), and will cook on 325 instead of 350. They didn't taste bad just didn't have the right consistency.

Did you brown and drain your sausage first?
That the way I do mine. That way the coon balls are not to oily.
I mix my cheese, bisquick in a bowl while waiting for my sausage to brown.
Let it cool and mix it in with a 1/2 cup of water.

I did not cook the sausage first and it's too late now. Going to roll up my sleeves and kneed them the way I should have the first time. Got to wait until it is at room temp tho.
Here is GDG's original recipe.....says to brown sausage in skillet then drain......
GDG's Coon Bisquits
COON BISCUITS or MUFFINS
1 pound of hot sausage{or mild if you prefer}
1 pack of coon cheese{or shredded chedder}
2 and half cups BISQUICK mix
crumble sausage into skillet and brown then drain
put BISQUICK and sausage into bowl with the coon cheese grated up. We use shredded chedder cause ya cant always find the coon cheese. Add half cup of water or so and mix all this together until ya get a dough like biscuit dough, spoon small balls the size ya want onto a baking sheet and bake at 375 for about 15 minutes or untill brown. Take out and let cool and enjoy. And like I say make plenty of extras. Pop em in the microwave and warm em up with your coffee in the morning or just eat em cold{room temp}

I done made the balls and biscuts today. They both hit the spot.
This batch is better but still lacking. I made too many modifications to GDG's receipt. Going to use it word for word next time.

If ya take a spoon and keep it dipped in water just like ya doin hushpuppies they drop off the spoon alot easier. But shhhhhhhh cant be giving all my secrets away!!!!
