Makes a better crust. My uncle used to make batter out of beer and pancake mix. Don't remember the proportions, but, man, did it taste great!
Makes it crispy and sweet.
The fizz in the beer makes a lighter batter. It also adds a certian flavor, if you don't like the taste you can use 7up or sprite. You can also use soda water or seltzer. Lemon flavered carbonated water also adds a nice hint of flavor.

to me beer bater fish taste alot like Captin D's fish , We have always Fried Stripers, Big Cats,Big Large Mouths In Beer Bater, the beer bater seems to help take the "fishy taste " out of the "stronger" tasting fish ,,
Mama's Receipe 1/2 yellow cornmeal 1/2 Flour , Salt ,Pepper to taste , ,, then add enough beer to make a batter thats is thick enough to stick to the fish BUT not so thin that it drips off ,,we always pat the filletts dry before dipping them into the batter as it helps the batter stick !!
The beer (or other carbonated liquid) serves as a leavening agent - baking soda - so it makes the batter bubbly and light. It's the same reason you can use Guiness in the recipe for Irish soda bread. - Roberta
Since using a whole can/bottle of beer would be to much, you must drink the rest. Wasting id bad.
