This one is the best I've found so far. Its a salt water series.

I guess I'll try one of those. My old fillet king died today. There doesn't seem to be any form of commercial grade unit out there.
I gave up on the fishing brand filet knives. I use one that I also have for carving thanksgiving turkey with. They are built better.
I sure like the rapala brand. I have one that is 110vt, 12vt ciggarette plug and 12vt alligater clips. It has done me well for 5-6 years now. I won a cordless rapala and it was nice but the batteries would not hold a charge for very long. I also just won a 110vt Rapala that is not to bad but does not seem to run as fast as my other and like you had said above it seems to get hot in your hand after 10-15 fish.
Geting hot is why I purchased another spare knife a couple of days ago from Bass Pro. I have had every type and brand. But last year at fall camp someone put a Mr. Twisters in my hands and it was the best one I have ever used.
Hahah I got about 4 rapalas I wouldn't sell to my worst enemy, bought two last year both broke during first use. Thats when I decided to get one that was meant for heavy use.

I have two Rapala knives....battery and the 12v/120v. They run too slow and I don't need hand warmers while I am cleaning fish. They both get hot as H E double toothpicks.
Been using an old American Fisherman that I got at a garage sale and it works great. When it dies I will get a Mr Twister. I know several guys that like them.
I get Black and Deckers for $10 at the outlet mall in Branson. I used these to fillet everything from bluegill's to #15 northern pike and they last a long time. At this price you can get 3 for the price of a name brand.
american angler is what I use and have for long time, but DWs advice is also great, best way to keep them cool is fish with me, you wont catch enough to clean to get the handle hot.
really though the american angler has served me well for many years, when it gets hot I sit back take a short beverage break and then get back at it.....
