my wife likes the lemon in the yellow bag we add cajun season before breading. never thought i would like it
Few years ago we cooked at a local church. The fish were marinated in hot sauce.......been doing it eversince. Try it some time.......Can't hardley taste the sauce and they brown up reeeel good.

I just bought a big jar of the Zaterans at Sam's. Haven't tried it yet.
We use the Zaterans in the big jar or Louisiana and add a crab boil to make it a little spicy.
throw in a little tony chacues hot seasoing give it a little kick

I cook in the green on the Cajun cooker about 350. What I try to do is watch the temp as it comes up. When it gets to 300 the hush puppies go in. by the time it gets to 325 they're done and the larger fillets (fish my wife catches) start going in. The smaller fillets (all the fish I catch) go in last due to less cooking time.
Speaking of that who has a good hushpuppy recipe I gave kids so no strange fire recipes
I slop my filets in a mixture of yellow mustard and Louisiana Sauce (1/2 and 1/2). Then bread them in my favorite bredding. I like to mix my own when I have time..... Onion powder, garlic powder, celery salt, lemon pepper, white pepper along with the yellow corn meal. I don't trust my thermometer any more; burnt too much grease in my time. I watch the oil and when it starts swirling, I will put my "taster" peice in. I reduce my heat constantly.

Our puppies...an egg, corn meal, chopped peppers (my wife doesnt like anything with heat so it's bale peppers around here), onions, and some grated cheese.
I get the Martha White Hushpuppie mix from walmart, instead of water I use beer, cut up a jalapeno and a half a onion, mix it up and let it stand in the fridge for an hour and then spoon it out when i have the fish and fries done... The martha white mix is the best me and my family have ever found... They come out very fluffy and my grandmother tried to compete with it and finally she even decided it was better than her recipe!! LOL SHe said she was tired of mixing them up anyways!!! LOL
As for fish fry, i use yellow corn meal and add ceyenne pepper, tony's, salt, pepper, and cavenders.. YUMMMMMY!!!!!
That sounds good i tried the "LOUISIANA" Hushpuppie mix and it was bland
I like Andy's fish batter (found at Kroger) or young's if you can find it. I also make my own mixing white and yellow corn meal season to taste. Cook at 375-350. As for hushpups I've been cooking some frozen brand from wally world (country's best or something like that) with japs and onion they are sho fine.
