Question about my Cajun Fryer
I've got a 6 gallon Cajun Fryer that I like but I don't think I'm getting the gas flow/flame set just right.
I mainly do a smalltime commercial thing where I have a potato slicer that gets them paper thin. I fry them and sell them as homemade chips.
It takes about 20-22 minutes to warm up. The manual says 14-16. Also after cooking about 4 orders of chips (average is 2 russet potatos that I buy at a grocery store so they're not huge spuds) the temp drops so far down I have to stop a couple of minutes to let it heat back up.
I open the canister all the way and use the thumb valve to set the flame. The flame is pretty much all blue and it appears there is about 1/2 to 1 inch from the burner surface to the base of the flame itself.
From all the great reviews I've seen of this fryer I'm thinking that it ought to keep right on frying and not drop that much. Maybe there is too much water in the potato for it maintain temperature cause I fry all of the water out.
Any suggestions or guidance would be appreciated.
