I understand they cannot be frozen well.

my dad says that if you prep them for cooking, dip them and bread them, then freeze them immediately they keep really well. I haven't tried it myself though.
I clean them then dip in egg and then bread them lay them on wax paper put in freezer till frozen then bag them up in whatever portions you want for cooking.This seems to work well if you thaw them almost all the way then fry them dont let them thaw completely. Don't get me wrong nothing is as good as fresh but this does let you freeze some.
My grandparents use to do it ust like Hogster and redneck said above. Wax paper on a cookie sheet till froze. Then you can bag them up in freezer bags and save for later in winter to get them out. Still not as good as fresh but when it is snowing outside and you can get them out and fry up they will taste great.
my wife does the wax paper and cokie sheet they are not to bad when the winter is here .we need some rain and warm nights .
what they said above,or you can bread and partially fry,then freeze.
They have a high moisture content,when you freeze the water expands and breaks the cell wall of the plant,hence being "soggy" when you thaw from all the moisture leaking out.
Thanks for the tips fellas. We are going to have a big fish fry in May and wanted to try to have some mushrooms with it. We just didn't know of a way to freeze them so we could. I will give it a shot and hope it works out. If it doesn't they just won't get served I guess.
If you have a craving for mushrooms and they are not in-season. I go buy the sliced portabellas, or buy the big protabella caps and slice them. Then batter and fry like you do morels.
Pretty dang good eating any time of the year!
The portabellas work nicely but also the white "button" shrooms fry up very tasty. If you want to take a walk on the wildside... do this.......

My uncle-in-law told me about this and I didn't believe him till I tried it. They taste very close to morels! I just dredge our morels in seasoned flour and fry so that's what I do with the dandelion flowers. Very very good!!!
i lay mine on a old window screen untill dried out , then vacum seal and freeze. when ya want them just unthaw and place in water..... they come right back to life. i have done this for years... good luck

Yep dehydration works great. I dehydrated some a couple of years ago and then put them in the freezer. Only takes a few minutes to bring them back to life in water.
For years(when I find enough!!) I have breaded and PARTIALLY fried mine, then lay out in a single layer on waxed paper to freeze. Then bag.
I've had fried mushrooms for Thanksgiving and for Christmas before....they are great...don't thaw them at all! Just drop them into the oil...only takes a minute or two.
I cook mine half done then freeze take out make sure grease is hot, cook for a minute then take out, works for me
