Pics of Grizzly double seat rig
Someone wanted a picture when I got them set in the boat and I finally got a second seat to mount on it (my high backed "captains chair" :D ).
I'm not a small guy and it seems to be plenty sturdy. I like it because I can still open the hatch for the front deck storage.

You just need a bigger boat
:D ... yeah, yeah, I know ... that ain't happenin' either :p
OK ... then, how about this : consider running some straps from the rod holder plates to the front chair legs
That should keep the chair from skootching, whether sitting in it or running down the lake. But, then that brings up a whole other "situation" Doh ... how well can you see out in front of you, when driving the boat, if the seat setup is still on the front deck ?? Or, do you dismantle it between runs ??
Maybe, in the event that (for whatever reason) you can't get an offset pole to work ... you could rig something for the chair legs, like you have for your rod holders ? Even a nylon strap, attached to the center of the chair frame & bolted to the front deck lid, would offer a little more anti-skootching protection.
Other than extending the deck, or the offset pole working, these are about all I can come up with.
