The only tip I have is: the oil will heat up quicker than you might think. I have a 4 gal. 2 basket and it only takes about 10 min to heat to 350 degrees. You don't want to over heat your oil. Have fun with your new cooker. I am glad I bought mine!
I've cooked a mess of fish in mine plus fried chicken and a turkey last Thanksgiving. When you're using the small pot for frying you can shut off the gas every so often and it will be hot enough to keep cooking fish for a while and won't over cook that way. Also only drop about 2 or 3 breaded fish in the hot oil at a time. They'll cook a lot better that way. Take em out when they float to the top. If you put your breaded fish in the fridge for a while the breading stays on better. Peanut oil is best but expensive too. The blended (peanut and vegetable) oil works pretty good and don't break the bank.
One more thing. Try frying pickles to go with your fish. Yum! Just get some sliced dill pickles in a jar, bread them in some cornmeal like your fish and deep fry. Dip them in some Fiesta RancH dressing.

Best tip I can give you is to get to catching, cause you now can fry faster and easier. And throw the baskets in the dishwasher after each use. If you just leave em in after your through frying, when you heat up the next time, they will cook on the previous cooking debris, and they can get to where certain food items will try and stick to the mesh when you first put the food into the basket. You'll enjoy it once you learn how much heat to run. If you have a good thermometer, check to make sure that the unit thermometer has been properly calibrated. Or just fill the unit up with water and bring it to a boil and check for 212. You'll get to where you can pretty much listen to the noise of the burner and know how much heat you're throwing.
Try not to open the gas adjustment past 1.5 turns. If you do and cook for an extended time the government required valve on the tank will freeze up and she will start shutting down. The fruther you open the valve the more it will shut down.
Got to use my cooker for the first time today. Wow, that thing is awesome. I highly recommend this thing to anyone.
Had crappie, fries, pickles, and hush puppies. I have never been able to cook hush puppies and this thing cooked the best ones i have eatin in a long time.
The only thing is that the baskets won't fit in the dishwasher so we are going to have to wash them by hand (no big deal).
It heated up to 350 and just sat there and cooked everything perfect. I must say Money Well Spent.
Gonna have to work on filling up the freezer cause its no big deal to have a fish fry now.
I know it cost a little more but it is a nice fryer. I used the same oil for a 2 years and I use it at least once a month.
You will love it.
I have another (cheap) thermometer that I check the built in one while heating oil. I have had the built in one to go bad and it is not a pretty site when you over heat.
Right on crappie14. Years ago i was using a turkey fryer to fryfish. And i had it heating up on the deck while I was cooking some other things in the house. I couldn't get the oil to heat up. every time i checked it, it still wasn't 350 yet. Well I turned it up all the way and was standing there looking at it when POOF it went up in flames. I was in shorts and sandels I went to the truck and put on my fire gear and yelled to the wife to get me a pizza pan preferably one you don't want anymore. I did burn a spot on the deck but I saved the house. So yes check the thermometer!
