use a small melon ball scooper or a small spoon, making sure you dip it in a glass of water after every other puppy. They should slip right off and stay small that way.
anybody got a good hushpuppy receipt that they would like to share???
Bluewater- Here you go You can add onion and many other things to your liking.
Hushpuppies
1 C cornmeal
1 C flour
1 medium onion, minced
2 tsp baking powder
1 tsp salt
1/2 tsp black pepper
1 egg beaten
3/4 C buttermilk
3 C vegetable oil
Mix dry ingredients and onion together. Mix in the egg and buttermilk. This will be a thick mixture. Let sit for 1/2 hour.
Heat oil in a deep fryer or deep skillet/wok to 375 degrees. Drop by teaspoons into the pan. Fry until golden brown. Drain on paper towels, serve immediately with ketsup, butter, malt vinegar or honey
This is just a general way of making them you can add hot sauce or hot pepper, onion and many other things that you may like. IF you run out of Buttermilk you can use regular milk just add a teaspoon of vinegar to it and let it set for about 10 minutes and you will get about the same effect. We love these with deep fried fish. Hope this helps you a bit. Ron
From looking at the recipe, that will make way too many hushpuppies. You may want to cut that recipe in half. CEB -
Ceb that is for a family of 5. That was the size of our family. It worked out pretty well. I guess you can split it but I have never tried that? Ron
My recipe doesn't use that much meal and flour, and I usually end up with ~20 hushpuppies.

to make the hushpuppies look like small round balls, go get a very small metal icecream scooper. I wouldn't recommend dipping it in water, but dip it in the grease before you scoop the batter up and they will slide right out.

1.5 cup corn meal
.5 cup flour
1 tsp baking powder
.5 tsp baking soda
1 tbsp sugar
1 tsp salt
1 cup grated cheese
1 can corn
1 tbsp. jalepano
1 egg beaten
1/4 cup onion
1/2 cup beer
Combine all ingredients. Onion and/or hot peppers are optional. This recipe makes some great hushpuppies, just don't make em too big (or they get done on outside, not done on inside).
I dip my spoon in water before every pup I make and never had any problems...Make um slide off much easier and a little drop of water ain;t no big deal...Better not cook any frozen french fries drill inst, they have frozen water all over um.
My wife uses her cake icing bag 'thingy'. They come out as big or as small as you want....depends on the size of the 'fitting' on the end of the bag. Usually, about the size of a small egg or ping pong ball is the best size.
here is the way that I make hushpuppies.
1- cup self rising corn meal
1- egg
add milk to desired consistency
onion to taste
Jalepeno peppers to taste
drop by teaspoon ( do not pack or roll into ball, this makes them doughie) in hot oil (350 degrees)
remove when they are golden brown.
Here's one I can't steer away from:
1-1/2 Cups Cream Style Corn
Self Rising Corn Meal (amount to be determined) (I like the white)
1/3 Can of Beer
Green Onions (chopped)
1 Teaspoon Salt
1 Egg
1/2 Bell Pepper (chopped)
2 Teaspoons Baking Powder
Vegetable Oil or Peanut Oil (for frying)
Cut green stalk onion in lengths to fit in food processor. De-seed bell pepper, and cut up in chunks small enough to also get in food processor (with the green onions). Process these together until they are "pureed mush". Mix this in a bowl with the egg, corn, baking powder, beer, and salt (everything except the meal). Then start adding corn meal until the consistency suits you (thick enough to stay together on the way to the pot!!) Fry golden brown.
I have a bad habit of puttin' a little extra corn, bell pepper, and green onions. The taste is awesome!!!!
