Dual wall heat shrink is made for watertight sealing. I use it on my ROV robots and successfully dive 1 atmosphere with no leaks.
Google up dual wall heat shrink and read the specs.;)
Also,
If your break is in a flex area, if you can,,,, shorten the cable and splice in a non flex area. In flexing areas, I use spiral wrap. Good dodo that spiral wrap. In fact, I wrap most of my wires in the spiral wrap. Looks good and is protected from me.
Nothing special about transducer wires, so don't believe any bullchips.
