It's that time

Tapping my Walnut trees this spring. Heard Walnut syrup is better than Maple. My buddy has all the Maple trees so we'll have a taste comparison when were done. Takes approximately 40 gallons of sap to make 1 gallon of syrup, I'm about half way there.

Does that damage your trees long term?

Not at all. We tap different set of trees every year. The hole will seal itself in about two years.

catchncrisco, What size hole do you drill and how deep do drive the spigot in. Also, you have to add sugar to make the syrup
don't you? If so, is it put in on the front end or after the syrup has boiled down?

7/16 hole approx inch deep.....you collect 30 to 40 gallons ...start boiling it down in a 5 gallon pot... will keep adding to pot as it boils down to concentrate it...it'll thicken up and really get a rolling boil at the end...my buddy is the expert he has the hydrometer to check it and tell me it's good to go.

We don't have the real deal down here. Just store-bought stuff. Probably not close to what you're making. The reason I'm
curious about this is I have an over abundance of muscadines every year. I have been trying to make a syrup with it and
no matter how I try to do it, it always jells. When do you add the sugar to yours? We make 5 or 6 cases of jelly every year
to give away and was looking for something else to do with them.

Never do add sugar...the sap is pretty much tasteless and watery at start... it'll boil down to sweet syrupy goodness in 6 to 7 hours

Sounds interesting. Never heard of making walnut syrup. Let us know how it tastes. We have made maple syrup. Last time was about 5 years ago. Wife water bath canned enough to last for a long time.

Every time I visit this site I find new and interesting things that I think “hmmm I could probably do that” and I never actually try them. Good information. Got me craving a big stack of buttermilk pancakes with fresh syrup now. Lol

Pulled my taps yesterday...got 30 gallons I'm guessing... started boiling it down after work .... Left for in laws this morning will get back to it tomorrow afternoon. Hopefully Monday I'll finish it..Attachment 291410
