Caught in some nice clear water with muck black bottom is all. Catch them in dirty/cloudy/muddy water and you'll see that they are almost white.

That explains why yours look like ours here in the north. Clear water, muck bottom is a good description of many of the lakes we fish.

Fish coloration is typically well defined by the clarity of their environment.
