I have two Maxxum 75, one is a select a speed 1-5, is newer
The other is 75 variable speed. If I change out the rheostat can I convert the newer one to variable?

Above my knowledge, sorry. Hopefully someone more mechanically inclined than me will reply.
It’s possible if the wiring inside the control head is compatible. Call MinnKota customer service or a reputable service center would be my advice.
