Easter Pizza
So much work has been going on we decided not to make a big meal or travel around today. Both of us are a bit tired so this morning I made 2 pizza crusts. One is still in the fridge the other I cooked for lunch today while taking it easy.

I pulled out a pack of the Sweet Heat Italian sausage I make and browned it a little to reduce the water content since I was making a thin crust pizza.

Again working with a thin crust I super thin sliced this purple onion.

Being a 16in crust I'm still learning how to handle it so it's not perfect but good eating.

I run this can of tomatoes in the blender adding a bit of extra oregano. Being fresh tomatoes the sauce cooks up fantastic.

Starting with a thin layer of sauce I next add the mixed Italian cheeses followed by the Mozzarella cheese. You can get an idea of how much of each cheese I use. I like to sauce very close to the edge and add extra Italian cheese right around the rim. Using sandwich sized pepperoni & homemade browned Italian sausage for the protein is wonderful. Baked on the second lowest rack @450 degrees for 18 minutes is just about perfect.

It was too big for the pizza knife I had to pull out the pizza cutter and finish cutting. Rolling the cutter I got a little crooked in spots. We crushed it. Very tasty combination.
