I'm thinking as soon as the stitches are out I will try a soft fried version of these. A nice Lemon Creme sauce would go well with these. Thanks for posting Bud.

Looks like the “bite” will really be ON when those are served up.
One thing that I do different is I whip my egg whites separate, mix the yolks with everything else wet but fold the fluffy egg whites in with the fish during the final mix. Makes a much lighter fish or crab cake.
