Smoked Pulled Pork Rib Meat Nachos
I'm dealing with a light case of Vertigo so cutting out salt is on the menu for me right now. The Tostitos are low salt, other than that the rest is full strength.

Laying out each tortilla first then adding a little pulled pork to each, adding TN BBQ sauce before topping with shredded sharp cheddar cheese. Into the air fryer at 350 degrees for 4 minutes to get the cheese melted and the pork hot. It also really crisps the chips. Out of the oven I added squeeze sour cream & guacamole.

Now you see it, now you don't. I'm stuffed. The pork ribs I make the pulled pork with are massive, like from a 400 pound hog. I cut the ribs up into sections so they can be brined for 3 days before rubbing with Rudy's and smoking for 3 hours. Then they go into a very large stainless pan with a few beers poured in and sealed with foil. Into the oven they go at 275 degrees for steaming till the bones fall out. Makes a very unique pulled pork, very rich.
