Leftover Tamale Meat Tacos

I still had about 1-1/2 pounds of seasoned pork tamales filler meat in the fridge so I made hamburgers out of all of it the other day. Well, I decided to pull the leftover patties out, toss in a skillet, chopped them up with a spatula while reheating, and ate it as taco meat in a taco. I can't begin to convey how good the tamale filling is as a taco meat filling but I will never use taco seasoning again. Man it was outstanding.

I ended up eating 4 of these tacos then the wife & I ate the rest of the pork tamale meat off the spatula. I will make a better version of these from scratch next time. She fresh grated some Monterey Jack cheese and sliced some lettuce along with a real good jar salsa warmed up to 105 degrees. The Taco Bell shells need a few minutes in the oven before using to crisp them back to what you expect a good taco shell to be like.
