Attachment 473351Wife was on a business trip so I decided to cook some poppers. They are too spicy for her taste. These have been made for years. Originally they were made with venison, but thinly sliced steak works well also. Very easy to cook. The prep does take some time. It consist of a thin slice of meat rolled around a spoonfuls of cream cheese and a few pickled jalapeno slices wrap a slice of bacon around the meat and then cook in the smoker or the oven. I start out in the pellet smoker at 350 degrees and then transfer to the convection oven until the bacon is at the desired doneness. Absolutely delicious Attachment 473352
