Took a backstrap and removed sinew . Pounded it out with meat hammer . Put Cream Cheese and Jalapeño Peppers in it. Then cooked Bacon in microwave 4 minutes (still soft ) then wrapped the backstrap and stuck Bamboo skewers to keep it around it . Sprinkled Garlic , Onion , Italian Seasoning , and Chives on top . Put in my smoker at 225 for 3 hours . It is so good even the little women ate it . lol
