A lot of the larger fish crappie & bluegill have this calcified meat. I would assume it's a parasite. Can someone point me in the right direction? Is it best to get these fish out of the gene pole?

Once you filleted them, they are out of the gene pool for sure. Not sure how you would tell about the meat without filleting them.
It's more prevalent in the 13 to 15 inch crappie. It's normally in the pig of bluegills anything over a pound.
Can't say I have ever seen it
