Anyone have any thoughts if this will work. My pier ends in 7' fow. It tapers to 15' about 1' per 3' of surface distance.

It'll work, but you may want to get the software download to put it in "Perspective Mode" for water that shallow. And you'd have to get the bracket (or fashion one of your own) so as to turn the transducer sideways for use in Perspective Mode.
Normal (upright) position of the transducer will still work ... but your field of view could be limited in close range :dono
The poles I build for the Saltwater guy's Bay Boats here all have the perspective mount on them. Crappie Pappy is on the money with advice here. Perspective View will allow 270 degrees I think of view. I may have the actual angle a bit much, just the number popping in my head right now.
I use a Humminbird Fishing Buddy around our dock. I get a perspective mode by angling the shaft. Poor man's rig.
