anyone familiar with the 18650 rechargeable lithium batteries, they are 4 volts, if i were to make a battery pack with 6 or 8 of these will they run a garmin fish finder on my kayak for a day

Good ones will cost as much as a lifepo4 battery that will do the job. Chinese batteries may or may not last.

What is the total amp requirements for the electronics you would connect to them?
I use them in flashlights; the capacity is only around 3400 mA*H. They aren't very suitable for this application IMO.
Try Amped outdoors batteries strictly for electronics . 32AH is 250 and 48 AH is 280 with chargers . i have the 32AH and runs black box and 1242xsv for almost 16 hours and weighs 4.8 lbs . Added quick connects and carry in a plastic Ammo box from Harbor Freight.
