If anyone is planning on going after these in New Jersey be aware you cannot return them to the water alive. They are invasive and must be killed - that's the law. I have heard they are good to eat but never tried one. Make sure it isn't a native bowfin before killing it... Bowfins have a short anal fin, Snakeheads have a long anal fin.
thanks for sharing! I love snakeheads. For those who haven't tried catching them, they taste better than crappies. no lie! The reason why Crappies taste best in the sunfish family is because they suspend away from the muck, unlike bass and bluegills... so those fish tend to take in the smell of the water and it's surrounding. They are high in earthyness level. Snakeheads could be found bathing in the mud (thus nicknamed mudfish) and will not have a lick of mud in their flesh!
