Most of mine is in 6-8' of water consisting of small sunken willow and cypress tree laid horizontal to the bottom. Also, some pvc spiders a little shallower.

To me, that sounds like a good start ! Others may disagree, but unless it's a problem for swimming, or loosin lures, I'd think the more the better.
a large amount of cover is likely to hold more fish than a small amount of cover .
I know a dock that's much like what you have and every pitch anywhere near or under it gets bit .
Sounds like you have a good combination of structure for fish to relate too
Kind of like the song "too much fun ", No such thing .
It can be too much if you can’t fish it without gettin hung up
