Those big ones must be filleted , remove all the red and fat . Then cut into small steaks or not very good IMO .:twocents Those things so fat remind me of fatten hogs .:fish Much easier to use a manual fillet knife and faster than trying to pull the skin anyway !Quote:

It is a pile of work . Setting lines , catching bait ,baiting lines , running lines then the heavy work starts filleting and triming all the fillets ! :twocents But it is fun and good times . The fish frys will be great this summer too !:cheers2Quote:
