I like to fill that spiral cut with sweet baby rays and then put it in the smoker
Bologna 4 hours on the smoker with cherry wood at 225 then bbq sauce the last 45 mins only thing make it better would been a fresh tomato out of somebody’s garden! and a spoon full of Bama mayo!

Whew, I bet a thick slice of that would be good with some cheese on one or three of my mommas homemade biscuits.
That's officially a "BBBQ" (Bologna Bar-B-Que). Low-n-slow with mater and mayo, sounds good.
Can't believe I've never tried this! I have something on the smoker almost every weekend. We frequently visit family in Memphis and BBQ bologna is on almost all of the menus there! Gonna get a roll and give it a go soon!Quote:
